The origin of sushi goes back to South-East Asia in 2nd century when meat was cured to preserve it. It was rolled in rice and then when fermented the rice was discarded and the content eaten.

The idea travelled to Japan whereby the Japanese used the idea of rolling the fish in rice and then preserving the rolls in rice wine, sake. It is documented that vinegar was used to preserve the Sushi to speed-up the fermentation process. In the 19th century Japan raw fish was used in the sushi, now known as Edo style and then as time progressed street vendors and stall holders of Tokyo invented a process called nigri-sushi or hand sushi whereby the raw fish was placed on top of the rice.

Today, sushi is now recognised world-wide as a healthy dietary option and is now a well-known dish served in restaurants and available as a takeaway in supermarkets. California Rolls with vegetable content have been produced as an introduction to those wary of raw fish, or for vegetarians and vegans.
